Function withOccurrenceExcluded

The metadata to save so that ONE occurrence of a recurring meeting stops appearing, leaving the rest of the series untouched.

Returns the meeting's full metadata with this occurrence added, so passing it to an update cannot drop anything else stored alongside it — the update replaces the whole object.
